Stijn Jardin is Seppe’s partner-in-crime when he travels around cooking, when he visits top restaurants or accompanies the Belgian royal family in Asia, America, South America or Europe. In the past few years they both got inspired by other world food ingredients, recipes and  techniques which they enthousiastically tried to embed in their own cuisine. During one of their trips the idea came up to grow mushrooms on residual flows of coffee reused as a nutritious soil for mushroom seeds. Waste reduction and recycling transformed into a new and tasty ingredient.
